Gambas al ajillo (garlic prawns)

This remains one of our favorite dishes! Is it because it evokes one of the best holidays ..
We say thanks to Fuerteventura kiosk “Añoranza” (perhaps for the heavy dose of garlic) from which we borrowed this simple and tasty recipe! The only suggestion: do not plan social activities soon after!

INGREDIENTS (4 servings)

– 600 grams of prawns
– 6 cloves of garlic, at least (we put 10!)
– 3 chili peppers
– ca. 1/2 liter of olive oil
– 1 bunch of chopped parsley
– salt and pepper

DIRECTIONS

Shell the prawns and set aside.

Fill the pot with oil and garlic, leaving half part of the cloves entire and the other cut into rounds.

Add the chili peppers, cut into rounds too, and start the fire.

When the oil begins to boil, put the prawns (only a part, indeed, with a medium size pot you’ll need about 3 turns), season with salt and pepper, then sprinkle with chopped parsley.

The cooking is done in a few minutes then you can bring to the table the pot few moments after having dip the prawns.

Serve with toasted bread.
